Mashed Potatoes and Spinach

Simple Mashed Potatoes and Spinach

  • Potatoes – I used white in the pictures
  • 1 – 12oz bag of fresh spinach
  • ¼ cup Sour Cream
  • Grated Parmesan cheese
Total time: 20 minutes

First cut the potatoes into equal pieces and place them in cold water on the stove (sometimes I peel my potatoes, most often I do not).

When the potatoes are fork tender, turn off the heat and drop the spinach in the water.  The spinach will cook in a minute or two and you can either drain in a colander or scoop out with a large slotted spoon into a separate bowl.  Add the sour cream, butter, salt and pepper to taste and mash to desired consistency.
