Pork Loin with Goat Cheese & Spinach


This is nice way to dress up a pork loin. I like to marinate my pork loin for a few hours first, but it is not necessary when combined with the flavors in this goat cheese spinach side.

  • One pork loin (marinated in a mild Italian dressing for a few hours)
  • 8 oz fresh spinach
  • 4 oz goat cheese, plain
  • 2 shallots, minced
  • Cayenne pepper
  • Olive oil, salt, pepper 

Special tools:
  • Cast iron skillet 
Total time: 40 minutes

Preheat oven to 350 degrees.

Next sear the pork loin in the skillet with olive oil on all sides. Only use a little olive oil as the pork will have some remnants from the marinade.

While the pork is searing, sauté the shallots in a few tablespoons of olive oil. Once they are tender add the spinach, salt, pepper and cayenne pepper. Let the spinach cook down quite a bit, but make sure there is still some moisture left.


 Once the pork is seared on all sides, place skillet in the oven. Cook to 135 degrees.

When the spinach is ready add the goat cheese and let it melt slowly.

If all goes well, the pork and spinach mixture should be done at the same time. Lay some of the spinach mixture on the serving plate, slice the pork loin, and spread the rest of the mixture over the pork.
